Miguel has been working with coffee over the last five years in the pursuit of a better cup. To achieve this in a sustainable and economical way, Miguel has focused on trying and testing methodologies to achieve better coffee through processing methods. He believes everyone can produce and process specialty coffee: “You only need guidelines and a little bit of intrigue about what’s happening around that little coffee bean to achieve your goal.”
Miguel first visited Mexico in 2015 and learnt about coffee processing and harvesting in the region of Oaxaca. As a Colombian coffee grower himself, Miguel has many innovative initiatives to improve the taste of the coffee grown in Pluma Hidalgo, as the quality is dramatically affected by the processing.
Miguel is an industrial engineer from the Universidad de los Andes in Bogotá, Colombia. His family has owned coffee farms for over 30 years.
